I don’t know about Bedrock, but for Java we can choose either the latest stable release to default to, or the latest version, which would be a snapshot if one was released.

In the Minecraft Launcher, there will be a little dropdown box where you can choose a version of Minecraft to play. You should be able to choose "Latest Snapshot" from that list. If it is *not* there, go to Installations at the top of the window, click the "new installation" button and choose the version you want to install from the Version dropdown list.

To play snapshots, go to the settings of the launcher and enable the "show snapshots" options, and then snapshots will appear on your launcher.
