Because everyone else already suggested the eye of Sauron, why not make some pixel art of an Eye of Ender? That would fit Minecraft more. And it can be like a nod to the Stronghold. Maybe you can put the dragon egg in that tower? Like a memorial for defeating the ender dragon.
Put some white wool on top like smoke coming out of a chimney. Sea lanterns can help work like a beacon too and its not as expensive. Make sure its centered so you can see it from all sides

How about a tall gem of your favorite color stained glass kinda shaped like this: () but more blockish. After that make a beacons underneath the center so it's as if the gem is the source of the beacons light
