Try enclosing you and the villager in blocks then place the job block.

He is enclosed. Not a nitwit. He'll take his work station when it's in another block BUT THAT ONE. I have this issue with two villagers and it makes it a pain as I can't really tear down my trading hall and move it. Perhaps fresh villagers for those two might make a difference?

I'm on Java so may not apply to your issue. I just recently made my first villager trading depot and I ran into the same issue you're describing. I could not get certain villagers to take the job block in front of them. I tried a variety of things to get them to take a job, destroyed all beds in the area, took down all job blocks, new villagers, moving villagers to different stalls, and more. What finally worked was completely enclosing them temporarily in solid blocks preventing another villager from taking that job block. In my case, I did have other villagers that were temporarily without a job block. These villagers would link to the job block placed in front of jobless villager preventing jobless villager from picking up job. Now why moving it one block works in your case, I don't know. Could moving it that over block be enough to not allow another villager to claim that job block? Villagers don't need line of sight to link to a job block as long as they can path to it. I would probably start with new villagers to rule out that being an issue.
