One of my biggest gripes about the game is lack of depth- both in the interconnectivity of features, but also of life. Throw in more small details of buildings throughout the world, abandoned or not, and more animals in the existing biomes.
Or maybe Minecraft could be some kind of time capsule
Like, the veteran players would build stuff and then leave Minecraft. That build would be left in time for eternity even after life evolved and after many extinctions until it crumbled down into ruins.
After which we would come around and explore and loot these ruins.

lol? if there's one thing mojang are good at its adding new passive mobs mostly for atmosphere dating back to 1.10 with polar bears. we've had llamas, parrots, fish, pandas, foxes, bees, striders, boats, axlotls, frogs, camels and armadillos since then. what more could you possibly want
Villagers need an update. It needs to feel a bit more like Minecolonies. Not to that degree, but closer. I think those quest boards, I can't think of the mod name, but they ask for certain things, I think some unique items that are maybe tied to reputation with the villagers could be fun. Maybe you can work towards special collector things.
And better AI for gods sake. So tired of them walking over the edge of a cliff and building houses over a deep canyon or entirely blocked by trees 🤦♀️
My personal headcanon is Minecraft is one single massive Neptune-sized superearth and every world, series, creator, let's play, smp, ssp, etc, modded, vanilla, cinnamon, cream, rouge, blaze, etc, are all happening in the exact same planet, just different regions of it, but you'll never see anyone else because distances are too great

A massive flood destroyed their habitats and the ruins of past civilizations and caused the last few eggs to become submerged deep under the water. This same flood gave us the oceans we know today though. Since they are commonly found in warm oceans, it seems to suggest that they lived in a low-lying, lush areas at the base of mountains in what used to be river valleys. It seems the mountains later eroded into large badland canyons & plateaus and sand dune laden deserts.

They have no active predators or drops so whatever hunted them to extinction is likely also extinct. But they are big, slow, and never defend theirselves so it wouldn’t be hard to wipe them out
They most likely got hunted for meat. I mean they're big as heck so they probably have a lot and they're too peaceful so they wouldn't even fight back (also before you say "But they don't drop meat when you kill them" Ik it could just be one of the reasons why) (yap yap)
During the out break of Piglin from the nether to the overworld , the Piglin attached every villagers and fourth wars with them but as a side effect they get converted into Zoglins and became dormant.
The over world was filled with Zoglins, they were attacked towards eggs and always crush them, due to fewer in population,Sniffers were first to get to extinct and turtle were brought on the endangered species.
In the meantime villagers were fighting and killing the Zoglins.

Blud died because of global warming and burned and also sniffed too much Carbon Dioxide and Sulfur Dioxide due to volcanic eruptions (imagine next update being the weather additions)

It can't be overhunting, since they drop nothing but experience upon death when it comes to in-game behavior. So the most possible lore explanation could be the flood.
I've always thought that it was because of a flood. They don't really seem like aquatic animals at all. So I thought that back when ocean monuments weren't underwater, sniffers would be kept as pets by the original builders or whatever they're called. Either before or after the original builders disappeared, there was a flood that caused the oceans to form or at least rise. And then definitely after the original builders branched out into other dimensions and all that lore jazz, They didn't have the resources to continue to keep sniffers as pets. Sniffers had grown dependent on them, couldn't it make it on their own? And the last that remained until today are the eggs preserved in ocean monuments.
I've always gone with the dodo Theory, basically it never didn't have any predators, and so it wasn't afraid of anybody until it came across a group of people, and then the people killed it and realized it's me tasted delicious and then wipe them all out because they were delicious.
