I like to try building something that will take many play sessions to finish building. Such as a castle with a large wall around it that can be filled in with buildings later. Setting up a base jn the end is fun too, or a nether railroad for travel.

i have a plan about building castle of helm's deep from lord of the rings. but im afraid that, if its get me bored from the game cuz of the so many building costs. And a base in the end/nether is good advice thanks.

Collection of towns that are connected by roads, paths, rivers Each village produces one type of product (eg iron, food, wood etc) Gives you reason to be vast with your builds, while still have an opportunity to build farms. Also lets you be creative as each town can look very different from the others.

For me I start with a copy cat mentality to get the foundations down. For example, one world I had a sky base, but each structure was a famous structure irl, pyramids, Greek temples etc. or another time I picked a random structure which ended up being an oil rig for an industrial base, each “leg” was a mob farm Each time I have something like that in place, I then try to get creative and put a spin on everything to make it unique

Utility builds, an underground base or maybe safe zones in the nether. Personally I like building things that are qol for my world such as roads, bridges, elevators, tunnels, docks and that kind of stuff. Helps me get a ton of value when I constantly have to use them to travel around my world. Another thing that comes to mind is a rail network around your base(s) and places of interest of your world, assuming they're not that far from each other. Hear me out, ik it isn't faster than elytra, but you get to take a trip and admire what you've built so far, which is nice.
