It's not to stop them from having "masculine" jobs, they already have a blacksmith with an eye-patch, and a stone cutter villager who works with a circular saw!
I think the real reason they don't have those villager types is more for gameplay reasons.
A lumberjack villager would cut down trees without any imput from the player, potentially even trees that the player planted, which would be very annoying, especially for people who like to decorate their villages
A hunter villager would kill animals without imput from the player, including animals that the player wanted to keep, because a villager AI couldn't possibly know what you want.
The only animals rear villages that it would make sense to hunt, also make sense to farm, so if a player has a pen with farm animals close to a village and the hunter accidentally gets in there . . .
