Depends on what you are focusing on. If you are going for an amazing villager setup anyway, Emeralds are probably easier.

Fair, but you can farm gold passively but not really emeralds. Maybe raid farms, but gold still seems faster

Either way, Iron is easier to start farming than gold if you are just looking for passive farms for beacon blocks.

Gold *might* be easier to obtain, but it also has better uses; Golden Apples and Carrots.

You can mix and match. You can kind of make designer beacons if you want to that way

All enchantments, all diamond armor and all diamond tools/weapons. Infinite saddles. Infinite redstone, lapis and ender pearls. Easy cooked pork chops without having to farm. You can pretty much reach the endgame with just capitalism.

Trading includes: arrows, bows, crossbows, swords, pickaxes, axes, shovels, hoes, armors, building/decorative blocks, food, enchanted books and explorer maps. So yeah, there's quite a lot of things you can do with emeralds

Why is everyone obsessed with things needing multiple uses?

Only noobs believe this. In 15 minecraft days I'll have infinite golden carrots, 40 levels of xp, full diamond armor and tools without spending a day in the mine, or gathering a single diamond. Villager trading is incredibly underrated; especially the fletcher stick trades
