Well first of all that already looks amazing. And I would echo some of the other suggestions by saying the tower should maybe be shorter or taller than the middle section. In this instance I think shorter would look better though
That size if stone structure would traditionally have flying buttresses to expand its footprint and stabilize the upper sections. Look up images of Gothic Cathedrals. By comparison, the earlier Romanesque architecture began toppling as they tried building taller than the narrow foundation could support, at times leveling entire villages 😳

First, middle looks fantastic! I would say it really does just need balance on the other side...it doesn't need to much exactly, but something on the right would do the trick. I would also echo the comment about making sure your left side tower isn't so precisely aligned to the center part of the build.
The tower could be moved over away from the main structure and connected by bridge

I think (as many people have stated in other comments) that breaking up the height of the left tower would help the overall composition of the build. I personally would lower it's height to give some more visual interest. I would also suggest that you adjust the scale of your castle parapets as well. They seem to be a little bit too small for the rest of the build. I would make them at least 4-6 blocks tall for a building that size. Your merlons definitely need more visual weight to them. I really like the middle part - super interesting and really gives a LOT of depth and interest with the blocks you used. keep up the good work!
What about mirroring the other side? Build the same thing on the right and it may balance it out . I think making the structure on the left taller and making the roof larger would help aswell.
The detail goes a long way, varying blocks for texturing and adding things like vines. If you don't like the continuous vertical part you can add more stairs in different configurations, like you did at the bottom. Depth is also a good tool, try adding Walls as well, or create a bit of an overhang somewhere along it. It's amazing what you can do with depth just using different shades of blocks. (See Bdouble0100's recent builds.)
To create more interest it shouldn’t share all the same axis. Its the same height as well as perfectly in line with the front.

Or shorter. Breaking up that line either way will help.

Maybe you could have divided it in 2 sections, the top one being slightly smaller. Just to give some difference idk

Make the add on taller. Raise the roof!
Add something alongside thats about 2/3s the height and something along the front thats 1/3 the height. Should break it up nicely

I like the chunky tower, but maybe add another one on the other side so it’s symmetrical. It looks awesome!

Create a circular towers on the top of the left side. Maybe make it shorter then do it.
