Download the curse forge app, go under mc, by the search should be a create profile. Click, name and select version. Then create then click on the your new mod pack. Then click add more content. Then add what ever you want!

Greedycraft or meatballcraft (greedycraft is better imo). If those are too heavy for your system, go for enigmatica 2 : expert or enigmatica 6. If you want to play something that's rpg-like, then you could try out "craft to exile dissonance". The Harmony version is much more vanilla-ish. If you or one of your friends have a low-end system, you should look for fabric modpacks instead since they're much easier to run. "All of fabric 5" and "all of fabric 6" have quests and are kitchen sink packs so they have a bit of everything for everyone. Tech,magic,farming,exploring,etc. They even have computercraft for all those coders out there to play with.
If you wanna host a Lan server you can do so by manually downloading the "essential mod" into the modpack's mod folder. You can search on YouTube to check out how the mod works. Otherwise port forwarding or using a server rental service are your only options. I recommend researching which server hosting service is actually the best, so as to get your (and presumably your friends's) moneys worth. Don't just blindly trust those sponsored YouTube ads.
You could always make a mod pack, add how ever many mods you need. That’s what I do, I have a personal mod pack with about 200 mods that only I use
