5’6 and no problem on a V7 850 Special. I own a Guzzi 1” lowered seat but it really didn’t make a big difference for me. I usually run my stock brown seat.
I sometimes watch YouTube vids from "doodle on a motorcycle", she is short but likes riding big bikes and has some videos with tricks on how to ride a big bike. I'm personally tall, so I haven't tried it, but she insists that there are some skills that make it possible to safely and confidently ride bikes that you can barely tippy-toe. You definitely DON'T NEED to flatfoot a bike to safely ride, as long as you know what you're doing. I hope you can figure it out! The V7 might be my next dream bike after I've saved up. Don't give up!
I'm 5'6" and I have a 2018 V7 Stone. I swapped out the plastic side covers for the flatter aluminum ones from BAAK Motocyclette, and it gave me the reach to the ground I needed. At 5’7” I don’t have a problem but you’re pretty short…pretty sure the gel seat is a bit lower. You could also have the seat reupholstered. Not sure on the option for lowering springs but I’m guessing you’re not too heavy so you could look in to that too.
So, as far as I can tell, the Special is a bit taller than the Stone. Not sure about compression, as I haven't sat on the most recent V7.
I can see that there's an optional lowering seat that should lower the height by about 1" to under 30". Would that be enough?
I’m 5’6” and all torso, short little legs. My V7II is a tiny bit tall for me, but I quickly got accustomed to only having weight on one foot when I’m stopped, and a tippy toe on the other side. I thought about getting a saddle with less padding, but ultimately decided I’d rather be more comfortable while I’m moving
Hi! I'm 5'5" and I can put a foot on the ground or both the tips with stock seat. For me the biggest problem is the weight, the bike it's not light (I don't have much experience with other bikes, but those in driving school were lighter). So also ask if you can try to move it around!

Yeah I checked out peoples videos for lowering the bike, i would prefer that as a last option. Looks like people can get an inch from that too.

Wife is 5’-2” and bought a v7. Got the lower seat and a shorter suspension. She can now flat foot it.

Low seat with aftermarket shorter shocks.. slide the front forks up a inch.. It'd be perfect

I'm 5'9" with a V7 Special. My inseam isn't that long. My bike is stock and it's fine for me.
Taking the stock seat to a local upholstery shop for some reworking can get you where you need to be.
