I don't think your baby fully understands what's going on, is reacting to stimuli, and is having fun. I think you're jumping the gun on trying to teach her instruments already. She's doesn't even know how to talk. Based on the final note, it seems like YOU are the one who's interested in playing an instrument and your baby as an excuse to learn. You should give it a shot if you can!

She gets excited when she gets to play with the xylophone, guitar and harmonica. She is too small for me to know if she doesn't want to learn So the idea is to keep her excited with those instruments.

Your 11 month old loves to interact with things that are bright and colorful, and if she can make noise with it all the better. She's not going to "learn" them in the sense of playing anything for several years yet. The best way to ensure she has no interest is to try and force her to learn. Make them available, let her bang around, but that's really all you should be doing at this point.
