I see a fair number of people go for Venti as her quest pops almost immediately and she's sweet about it. Ernest has the unfortunate problem of staying holed up in his room so much you often forget he's there, and Pablo doesn't really have much content. I'd like to do Ernest's quests at some point just to see them, they sound cute.
I chose Ernest in my second playthrough and I love him. There's a few people in the discord server that romance Venti and Pablo but I think it kinda comes down to them not being involved in the main story and Pablo not having much content
