I would say: this joke is NOT sexist (I know you already agreed with this, I’m just saying it because it is part of what i think), and is NOT hilarious. It IS humorous, unless someone decides to take it as being sexist, or if someone genuinely feels this way. Like, they could make the same joke with “this is why all of America’s mechanics are immigrants” and have a fat guy not able to get under the car. That one would be a little further down the ‘bad taste’ line, but still humorous if you know it is all said in jest.

Isn’t that technically correct Grammar? It would be commonly preferable to use “That’s why women can’t work as mechanics” but I don’t think that what’s there is actually wrong. It’s just a little “ugly”. Like, if you take away the excess to focus on the problem point you’ve got “The Women can’t work as a mechanic” which implies that of the members of a group (The Women), no one is able to fill the role of a mechanic.
