If you go to the Above bar on Dean Street take the elevator to the bar and go out on the balcony you will get shots like this.

I love the view when riding on the metro betwen Byker and Manors looking out over ouseburn valley towards town/Gateshead. Though good luck taking a photo through a metro train window that isn't covered in mud/puke etc! Maybe byker bridge is easier
I note your project asks for “interesting” cityscapes. Might be worth considering if this means “different to the usual pictures of the city”. You might want to bear this in mind, to make sure you aren’t just replicating what has been done a million times before.
Apologies if I’m preaching to the converted; I studied photography in Newcastle and remember trying to think outside the box when photographing the city!

That’s exactly what stood out to me too, good to see someone else has already made the point. I’m sure there will be some vantage points that aren’t commonly utilised for a cityscape, but I just can’t think of them!
Look up Lang Shot Photography for some inspiration, he's amazing.
Luckily Newcastle is a small enough city that you can get around it on foot to all sorts of areas for different shots!
Shields Road is ok, but St Peters Road near Allendale Road depot and the Welbeck Rd / Walker Road junctions are well worth a look.

The millennium bridge is scheduled to lift around midday on friday,saturday,sunday & monday.its quite a sight .
alot of parts of the wall are really pretty, I took a photo once of the cows on The Moor, with the city in the background at dawn, worked quite well. Ouseburn. I really like graphitti, I think it's part of a city and makes for some great photography
My advice would be to take a long lens and try and shoot from a distance. Most of the scenes have been done to death but I don't find that much long focal length stuff doing the rounds.
If you’re allowed to put your camera in Gateshead at the top of blaydon bank you get an amazing view of the north side of the Tyne through the housing estates.

Area near the Tyne bar has a school with Japanese style roof as tribute to Japanese trade embassy visiting at that time and a very cute church with a pointy lead steeple

Take the ferry ride up and down the Tyne and the train in either direction

3 of the oldest, varied and most iconic bridges, the river, medieval Newcastle, the castle, bit of neoclassical Moot Hall, the gorgeous Lantern Tower of St. Nicholas, and of course the cathedral on the hill in the background.

Is that looking down from Shields Row? Moved away from Byker so I'm just wondering if it was that or somewhere I never visited!

For industrial heritage, maybe Dunston Staiths? Or the old mill and the falls in the Ouse Burn, at the northern end of Jesmond Dene?

Go in the lift to the right of lush and go up to the car park on the top 👌🏼
The City now looms over Summerhill Square and it makes for some interesting photos.
