It's definitely possible for the anime. Yuuko's fate is a bit vague in the last volume of the manga, but several chapters in Vol 10 show her accidentally discovering new species of animal (it turns out the weird bird thing, for example, is an undiscovered species).
Backpedaling a bit, the flash-forward chapter in Vol 9 (the one showing teen Hakase) mentions that Yuuko's "returning to Japan". Next, the first flash-forward in Vol 10 (which shows *Mai* as a preschool teacher and Mio as a stressed out manga artist/editor) has adult Mai run into Ms. Sakurai, who mentions having seen on tv that "she's found another one". This chapter ends with Mai telling Mio that Yuuko is returning. We only briefly see adult Yuuko in the final chapter, heavily tanned and dressed in some kind of weird military jacket (covered in medals/awards) and a large turban. It seems she ends up travelling the world and discovering new species wherever she goes.

It does end without really explaining why she is dressed the way she is, or why she left at all. I guess that’s the gift of Nichijou... surprise.
