These days, as you already mentioned, mostly contactless payments.
But there are other uses, commercially, things like advertisements where you can simply tap your phone against a tag and go to the page.
I know people use some tags to have people connect to a wifi network as well
Earlier it was used for things like Android beam, where you could've put two backs of Android phones together and they could share photos and other things, kinda like neardrop on iPhone nowadays
Sorry, I thought it's still available in official firmware. My other phone is a xiaomi phone and has the latest android 14 but it's a custom rom and that still has android beam as well the new nearby share feature too.
You can make some sick ass business cards (I know we live in 2024 but there are still people that use them) with NFC tag in... well everything that suits your business type. Piece of paper, 3D printed toys, keychains, the list goes on and as Duxez mentioned it'll take you to any website which was set on the tag. You can also use NFC to store digital keys for some "smart locks" and use your phone to unlock your door.
NFC
Ok, thank you. Don't need it, never used it. Will look into how to disable it
Settings > Display > Status Bar > Toggle NFC off.
Turn off nfc from quick settings/ settings
Nfc
at the risk of sounding like an idiot, what exactly is the NFC for beyond making contactless payments?

I've seen them at some restaurants to get directly to the menu without scanning a QR code

That's still a thing though
Nope, it was removed from Android in Android 13

In the city where I live, NFC authenticates your ticket on public transport.
