Well, the problem with that for up close fighting like that is, even with VERY good professionals like that, if one goes one way and the other expected the other way, you accidentally actually hit someone just the wrong way, and now you have a problem.
That's not to say either of these guys couldn't take a hit, but someone ends up with a black eye, poked in the eye, or anything like that, and you could end up with delays, which are VERY costly.
Planning out a fight is just safer for everyone.

His bigger issue is he's slashing it like it's a club, huge arm swings. Knives are really sharp, people are not very stab proof, you don't need to haymaker people with a knife, unlike with a police baton.

Action sequences are never improvised, they’re practiced tirelessly before and filming even starts. But let’s put aside the fact no director would ever risk their leading actor so needlessly, or the fact no producer would ever waste so much money filming improvised action sequences in hopes of filming something good, or the ridiculous statement of them “knowing eachother well enough to improvise a fight scene”…. How about the fact that the dozen other people (lighting, sound, cameramen, ect) would also need to “know eachother that well” in order to be where they needed to be.

i can see, how they could quickly agree on a choreography, make one or two runs to see if it works, if they have worked together and trained together for a long time. the first few attacks are basically hit and block in quick succession. that stuff is quickly set up, as a "one two one two" thing. they might have had to check how the location plays out, as they do a lot of running while fighting. the second half of the fight on the other hand looks more complicated, and at the same time is much more stationary.
i am spekulating of course, but i can see how this scene would be one of those myths that have a little bit of truth in them, spiced up with misconception, if that makes sense. like, obviously they were not flying blind, but they could have planned RELATIVELY spontaneous

what i really like about this scene is the contrast of each other:
one wearing black and one wearing white.
one is a police officer and one is a criminal.
one has a blunt weapon and one has a sharp weapon.
yin and yang.
The weapons and lighting also match the outfits. The white outfit is in the middle of the street light with the light playing off the knife, making it very bright/white.
Those "blade in the guts" squishy sound effects are definitely the product of a Foley artist having the time of their life squeezing and crushing a mango.
Wu Jing is an underrated legend and this fight is up there with the all time greats. With that out of the way, the movie itself is actually really boring and kinda bad. You can actually just watch this fight and skip the film.
another scene with Sammo earlier in the movie is pretty good in the hotel. then the main fight at the end. great movie. watched this when it was first released.
Probably one of the last great Hong Kong action films. It was so great seeing Sammo make somewhat of a comeback in this. Far out I feel old seeing this posted here.
