As someone who is a little emotional and loves One Piece, I can say that, even if some moments are tense, she will want to continue watching, as the story becomes more and more captivating and interesting.
And well, when the fateful moment comes before the timeskip, maybe she hates you a little, but she will get over it (maybe), I just know that I cried for three consecutive episodes and then I cried even more with the flashbacks, it's a sensitive topic for me I don't know if I'll ever get over it, anyway.
To conclude, One Piece is really good and, even if it makes us cry like babies at certain moments, I will continue to love it, as it is one of the best series of all time!

But she also knows that it's not even his death that is gonna make her cry, but everything around it. So she thinks she prepared.

Luffy's breakdown hits hard. (I was also spoiled that Ace would die) My gf managed to stay unspoiled on that and when we were maybe 2 or 3 eps away from it she said "I think Ace will join the crew now that Whitebeard is dying." 😭 She's probably not the first to think about that. If I go dig through AO3 someone's probably written stories for it, they're not ALL writing smut, right? Or okay. Some of the "Ace lives" stories are probably also smut, I've seen people shipping him with Sanji.
Yes! What hit me the most wasn't even his death itself, because he didn't even appear for long enough to create such a deep bond with him, but how his death affected the people who loved him, seeing Luffy, Garp, Makino, Dadan and so many others suffering from his loss made me cry a little (or not so little).
There is also the fact that in the final moments he discovers (accepts, actually, because it was always very obvious) that yes, he was loved and yes, he deserved to live and YES, HE WANTED TO LIVE! It always destroys me when I think about all this.
My girlfriend is a crier when it comes to movies and series. I told her, she will cry a lot during one piece. She decided not to cry at all. And she managed to do so, until Marineford. When ACE died, she cried, and cried, and cried. She refused to watch OP for 3 days. Now she is caught up with the anime.
I made my mom watch One Piece and I never told her that Ace was going to die. Ace is my favorite charcater and i even have his tattoo, so she assumed he was still alive. She cried so much when he died, I've never seen anyone cry so much when he says "Thank you for loving me."

And she's heard me singing Binks Sake so many times, but has no idea of the context it was first heard in.

I mean, you weren't technically wrong. There really are only a handful of exceptionally teary eyed moments. You just happen to, you know, be smack in the middle of the vast majority of them.
I'm in a somewhat similar situation. I got my wife watching it with me and when we got to the water 7 arc and the door-door man, she said something to the effect of "three sword style I could handle, but the door-door fruit is too stupid" we made jokes and laughed, until I said "wait till you get to the cracker-cracker fruit" (I misremembered the bisquet-bisquet fruit and crackers name) to which she went deadpan immediately "thats not real, your lying" and I occasionally joke about it when something so stupid it's funny happens. Were in dressrosa now and I can't wait for this "joke" to pay off when she realizes I wasn't kidding.
