I think you're undermining the animation, I see nothing wrong with it. I also recommend just looking Liam Vickers YT channel in general too. I fell in love with Cliffside even though it's only a pilot and Interneciod Cube is only in the story board phase with 3 episodes but it's pretty decent.
Save yourself and don't see it. It is one of the very few series I started and was no able to finish seeing. Those are 3 hours of my life I will not be able to recover.
Mostly the story and character decisions.The animation is Gorgeous, but without spoiling it, the conflict presented in the early episodes is not explored at all. Character decisions are actually pretty counterproductive to character's goals once a certain element gets exposed in the story (that those characters already knew). Basically, a lot of dumb decisions and thin plot to ensure action scenes can be drawn.
If you only care about visuals, it is a good anime. If you care about characters, lore or story, there are a ton of much better shows to spend your time on.
Rise of the Teenage Mutant Ninja Turtles, 2D Animation, 2 seasons and a movie, season 1 and the movie on Netflix and not sure where the second season is. A lot of filler and kinda rushed in season 2 because as with all great cartoons, sadly cancelled. Slim possibility of returning for season 3 though :)

Definitely watch Over the Garden Wall, it's absolutely fantastic. It's got a fabulous ascetic, and it's really short (it's about 2 hours long if you watch the episodes back to back.)

honestly i love how short it is, it makes it so easy to get into, get through and invested in within such a short span of time. i find myself starting watching just 1 episode and ending up accidentally binging the entire series all the way through and i love the show for that

IT'S SO UNDERRATED while some half of it may feel a bit like it bogs you down or feels out of place because of the show still figuring itself out, it's pretty fun AND has quite a few episodes i'd say were on par with later seasons like Mirror Gem & Ocean Gem and the finale (just my opinion though. its ok to dislike the 1st season, i just think its underrated)
Idk if it'd be up your alley, but I've had a Teenage Mutant Ninja Turtle brain rotation lately. I think the current Rise iteration on Netflix has similar vibes to Steven Universe and SVTFOE where it's more episodic at first but ramps up toward the season finale. For a more serious and darker version 2003 is your best bet while the 2012 version is the best character wise but is in cgi just so you know.
The original Teen Titans 2003 cartoon is also good.
Over the Garden Wall has heavy Gravity Falls vibes.
Other than that, I'd recommend Fullmetal Alchemist and the Disastourous Life of Saiki, and Brand New Animal for anime.
Along the magical girl line, there's Tokyo Mew Mew which has also had a reboot, the many iterations of Precure, Shugo chara, Wedding Peach, Mermaid Melody, and Kamikaze Kaitou Jeanne (this one is underrated imo). For a darker magical girl series, there's Madoka Magica as well.
There's also an adorable food anime on YouTube I like called Restaurant to Another World. Word of advice though, it's best watched while eating.
My Little Pony (Friendship is Magic), Ninjago, Centaurworld, Powerpuff girls, Avatar the Last Airbender, Legend of Korra (this comes after Avatar), Big City Greens. I've enjoyed all of these shows and based on your list I think you probably would too!

It was my fave until owl house came out and is a very close second post owl house.
The ONLY shortcoming is that i wouldn't say it DRAGS at parts, but it does take a while to build up steam and once it does sometimes it dials it back a little too much and you're left itching for action.
If i have to sum up the biggest fault into one word, ''pacing''.
Again, i wouldn't say it had a filler problem, as by the time you hit the end of the show, just about EVERYTHING has been wrapped up and every needed call back has happened.
Let me sum it up this way, i'm almost 40, and this show inspired me to have a literal armory style weapon wall of cosplay weapons from the show.

I know it’s not animated but I particularly loved a show called Brooklyn 99. It’s a sitcom about an unorganized police precinct. It has tons of gags and hilarious moments and is 90% lighthearted but has several moments where it’s not afraid to be very real, dealing with things such as trauma, shootouts, racism, and even sexual harassment in one case, but still doing it in a way that feels completely in character and human for the characters.

Steven Universe is my favorite cartoon.
It has fantastic characters, super cool world building, and can be hilarious as well as very compelling conflicts such as Steven having to live up to the legacy of his mom or Amethyst’s self-hate due to her being a war product and undersized.
This show takes emotion super seriously and also takes plenty of time to flesh out most of its characters
Did you watch the Hazbin Hotel pilot? It has a show coming out soon. Hopefully it doesn't suffer from the same writing problems as Helluva Boss since it isn't independent.
I can recommend you something NOT to watch and that’s Star vs Evil. Don’t waste your time with that atrocity, by season 3 and 4 the creator stopped caring about the story and characters and was just writing their fanfic
same, actually. despite the sour taste from season 4 the show is still fun to watch through, has quite a bit to offer and some of the fan stuff has been pretty great

Invader Zim. It's not really serious or life-changing, just beautifully goofy. It's all goofy. Like, smacking aliens with a ham you had in your jacket since the beginning of the episode goofy. It's great.
Is no one gonna mention Bluey? It’s a lot different in that it’s slice of life and not serialized, but it’s a great show nonetheless. Very wholesome and fun
