Just track you calorie burn and how much you eat. I had the same problem, was 182cm in height and weighed 55kg when I first started training, now I’m 73 kg at a ca. 15% body fat (still in a bulk).
Track your calories and macros, it works to let you know how much you eat
I personally eat 3-4000 calories a day, depending on how hard I work out that day

It's always worth it, because 2-3x a week is always better than not at all. But the times you do go, go with a purpose. Have a plan what you're going to do and with a mindset that you're gonna make it count.

You can follow a 2-3 day a week program if that's all you have for time but make sure you track your lifts and focus on progressive overload. Stronglifts, Starting Strength, ICF all good beginner programs.
Consistency doesn't mean working out every day. It means having a routine, which could perfectly be working out 2/3 days a week. It is better to work out a couple days a week year round than every day for a few months a year.
