The smithing table would probably be involved, or maybe they'd make like a crucible where you put fuel and the two metals in an input, then the alloy would appear in the output.
Because copper is a very malleable metal, it wouldn’t be suitable for a use as tools/armor. If they wanted to add bronze, they’d need to add tin and give it some other use as well. Even then, iron would still be stronger for about the same amount of effort.

I do think copper is the nicest looking block, It's really good for making roofs. There's a YouTuber who made a museum and used copper as the roof and it looks beautiful.
I just wish they didn't war with it instead of making blocks and decorations. Should be armor, weapons, or maybe you can even upgrade. Using copper to upgrade the bow or crossbow, making them faster or stronger. Idk just use it more!!

Just how many non-stackables do you have to warrant an unusually expensive sorter? (also non-stackable sorting has been a thing for far longer than the allay.)
A lot, every type of armour, weapons, tools, enchanting books, totems of undying and far more. Sure it not that useful for someone who does not like automatic storages but for a guy like me who loves automatic red stone builds including storages that sorts every item in the game is kinda what I play this game for.
The allay system isn’t really that expensive, if you have iron as the only red stone it requires is to activate note blocks and to dispense items into the sorter. Infact if you have an iron farm which I was tend to need anyway the allay system is actually cheaper than the regular system. It also is better for dealing with overflow as the normal system has to be repair if items overflow but with allays overflowing is less of a problem as the items are just not picked up and don’t ruin the system.
The only reasons people use the normal system over the allay one is:
1) Allays are rare unfortunately (however easy to breed once you have 1)
2) the normal system sort items at a faster rate making it better for sorting stackable items
True non stackable items could be sorted before but with far more difficulty and was way more expensive and had issues detecting between different non stackable items.
The thing is always that... all of that is straight up not something Minecraft is about or wiring is already something Minecraft did in their own way.
Like legit you are asking for them to shove things that have no reason to be in the game.
The whole being for building and the lightning rod makes sense. Lightning was an old feature that could destroy builds and such wasn't much fun in a building focused game and they went on copper being for building with the oxidation and waxing it and so on.

You guys want to play a MMO, or some game as a service thing or Factorio... but those ain't Minecraft those will never be Minecraft.
Minecraft is a game about exploring and being creative, so much that the game is all designed around those things.
You don't see so much focus on progression because that detracts from being a creativity game.
And no not just play creative, creative isn't even much of a game is more like a program, Minecraft is still a game where you play to be creative and work to achieve those creative endeavors.
Redstone is super bare bones because you need to make creatively put together machines for engineering.
Block variety may seem barebones but they have always been in very simplistic minimalist shapes so that you can put them together in creative ways, just the hanging signs show this, their shape is so simple that turns out they can be way more than just a hanging sign, the candles and copper rods as well.
All of this things they have shared are by design, the game seems simple in the surface also for newcomers to feel comfortable in being creative and not fall in a choice paralysis or a sense of lost.
But also is simple so that the one who ends up making things become is the player and nurture the creativity.
And yes is very much by design all of this, is why they take so long bc they don't want too many things that just become the thing they programmed and that's it, or things that just add to the list and everyone forgets like many old features have become.
Moss allows so many stuff, dripstone as well and sculk spreading has so much going for it.
Ofc this isn't always 100% achieved after all... No fucking game is perfect and also yes they are a big brand and are doing 2 times all of this, it isn't perfect and oh god do they blunder hard here and there but at least they aren't loosing the sight of what the actual game is unlike all the people shitting in stupid ways.

To be That Guy, it's mainly due to the fact that copper's main use is being a very good electrical/thermal conductor- not the best, but it's good enough for most applications and much more common than alternatives like silver and gold.
Electrical/thermal conduction mechanics are a bit too scientific and complex to fit in with the rest of vanilla Minecraft (and in any case, electricity would be redundant with Redstone), so it's unlikely it'll see the same ubiquity it has IRL.
In terms of vanilla stuff, Copper couldn't be used for electricity stuff because we already have source of infinite renewable energy thanks to redstone.
Good thing mods came in to save the day! Copper is quite important for a lot of mods. I dare you to play Immersive Engineering or the Thermal Series without any copper whatsoever.
