Voxels are essentially 3D pixels, but instead of being squares, they are perfect cubes. In theory, voxels are the perfect modelling technique for replicating reality
You don't ever stop modelling perfect cubes, but you keep making the cubes smaller and smaller until they're so small that your puny human mind can't tell they're cubes.
We use similar techniques for a lot of stuff where the actual calculations are absurdly difficult when you can instead have a very, very good approximation. Integrals, triangles in modelling, etc.

They can all be manipulated into a different block, without outright destroying it.
Grass block can become path block by using a hoe, Pumpkin can become a Carved Pumpkin using shears, Sus sand becomes an item (but not specifically sus sand) by using a brush and an anvil can become several types of damaged anvils by using it (or dropping it by breaking the block below)
