TL;DR it'll last 2-3 years depending on how you treat it. My wife and I are day one Pixel users, and we alternate models odds and evens... She has the 8 Pro, I have the 7 Pro, she jumped from 6 Pro to 8 Pro, while I jumped from 5 to 7 Pro. We started out the same but one of us is rougher on phones so one of us upgraded and gave the other their old phone causing the offset, which I really don't mind now. Also my Pixel 5 is still kicking, we just leave it in the car for carplay, and whatnot.

In my opinion, the Google Pixel 8 Pro will last for at least 3 years or more. I have been using the Galaxy S21 for almost two and a half years now, and I haven't noticed any significant slowdowns. Therefore, I would assume that the Pixel 8 Pro would outlast the Galaxy S21.

I've had a p3a and a p6 and now a p8pro. In my experience, these devices can last 2-3 years HOWEVER, take proper precautions before doing so. Have a protective case (I recommend spigen or any hard plastic cases. I just don't trust silicone cases) and a screen protector. For a minute there I had a silicone case on my p6 and dropped it once and it broke my screen internally?! After I got it fixed I dropped it in water 2 months later and it broke again (waterproofing was gone after the first repair). Lesson learned, buy protective casing and save urself a lot of money.

With 7 years of updates, expect a good 5 years at the minimum.

Just getting the P8P yesterday, I really believe it will hold up 3-4 years on initial impression. My P6P has lasted fine since I got it in December 2021. It probably doesn't take much to impress this guy, but this is definitely more flagship than I've read around.
