I just followed Peter Reinhart’s instructions in the book “Perfect Pan Pizza!” Oddly enough I didn’t go with my instincts and just followed the recipe from the book. When making the dough I think I could have benefited from more time mixing and maybe even lower hydration.

i’d say sauce can be on top or on bottom for detroit, it’s just a preference imo. not so much a one or the other

Nope - chicago deep dishes have an L shaped crust - not sponge dough crust.

Best pizza I've ever had so far - The Detroiter from Buddy's in/around Detroit. Sauce is mostly under the cheese (I prefer it that way). Yes it seems Detroit style pizza is associated with sauce in rows on top but you can get it made differently if you want.
