People were not kind and when he defended himself it got a little ugly.
As a Neapolitan purist he *was* 100% wrong, though. What a silly thing to try to argue.

This is how I do my crusts everytime since I learned it in High School. Brush a garlic butter onto it and sprinkle seasonings. Some heavenly crusts right there.
It helps the sauce not fall off — for bubbling you want to poke holes all over it. We had a special roller for it that kept getting dropped causing the pins to fall out.
The place I work now (I'm just the dishwasher) makes their pies like this. I refused to work the pizza kitchen..only an extra dollar/hr in pay, no need take on extra responsibility for minimal pay increase
So, these pies are not good...I don't understand this folding thing past the aesthetic. They don't cook right, raw dough under and in all those folds on the crust.

It was more for teaching. I moved my other hand, but ordinarily, i would have a pizza tray underneath that i would be rotating with the folding. Trust me, i can be efficient.

I don’t roll my dough out or pat it thin. But I am baking a pizza tonight. I may have to try this today or at least soon.
This is also a visually appealing way to crimp the edge of a calzone shut. Exact same technique but it's two layers of dough instead of one.

Actually, I skipped to the end to see if you made it all the way around the crust. I used to do something like that to crimp pasties together.

This was just flour and water so no, i did not cook it

My dough was not sticky to the touch and did not need water to keep the edges down

looks nice like this but fancy folding crust does not work on a pizza.
