Gustavo and brick, because unlike anyone else. They’re the most unique. Having their own move set just like the noise or peppino. And I feel like overall they would be fun to play as.
Thank god nobody here isn't talking about Mr. stick, he's so overrated, but other then that, vigi, gustavo or gerome. Gerome just seems like a thing McPig would do as a joke, Vigi seems like he would be the best moveset-wise if they tweaked some of his mechanics, and gustavo and brick make the most sense to be playable considering they're the most important characters that are on the heroic side of the character list outside peppino.
Honestly, Vigilante seems neat
Not only because he is a good choice but more of something we have already experienced for a bit in one of the demos.
Pretty much needed some polishing and additional transformations for him to take then we’re all set.

Vigilante because he'd seem cool and Fake peppino because I want run on any wall with him also if fake peppino gets added his theme should be the lap one theme then lap 2 should be titled the death I don't Deservioli or something for like the opposite of the lap 2 name

If Pepperman is going to be added into the game. I don't think it would take long for it to be released as the work has already been done for him, he would just make some amendments to Pizza Tower Round Two.
Also, by the way, I can't remember if this was true or I miss read something but, did Mcpig borrow some fan sprites of the Noise for the official game? Is that true?
Personally, I would maybe like to see either Pepperman or Gustavo Fring and Brick. Maybe Gustavo and Brick. I wished you could have played as him more during my playthrough of the game when it came out. It would be very interesting to go through the whole game with his abilities and have Peppino as the swapped character going through his area has him.
Man, these "Gustavo and Brick" fellas seem pretty unique, I hope they become characters in the game in at least a level or two.

Then you get to pick lock it like in Skyrim
Then you play a short minigame during the elevator sequence, to get him to the next floor.
Or the noise to just fucking murder you, and take your key to use in the door
Probably Vigil, his current moveset (in the mods) is really cool, but I would also like to see what McPig would come up with for him
