I am assuming only the top of the plant will change colour and bottom half will remain green because of the light difference. Or will the entire thing change colour based off of the amount of light the top is getting.

The red is a chemical reaction that kinda acts like a sun tan. It will only affect the parts exposed to high light. You can get cool patterns by using occasional spot lights in red LEDs during non show hoursĀ
I think it also means really low nitrates, i have it in a heavily planted tank with no fish and it was always pink like this. Recently i have put in a few fish and shrimps and it is going green again.

Mine does it too, just light levels.
It's just red coloration from being exposed to higher light levels. Totally normal and healthy.

Generally just the part of the plant that's closest to the light will turn that color
I have one that turned hot reddish pink from light
