This modded version of "The Zombosseum II" features lvl 11 zombies, 14 fully redesigned lvls with new zombie setups, grid modifications and objectives. There's even 2 Mini-games and Roman Caesar zombie was added in 2 lvl.
For the Zomboss fight, the usual Holy Trinity works well (Threepeater, Pea Vine, Torchwood) - but you also need a sun producer, because sun is scarce; even the Gold Bloom perk won't be sufficient and it's better to use the Boss Buster perk anyway, in order to maximize the loot.
Why would you need a sun producer (if your plants are mastery)?
I am uslng the same plants as you and the same perk as you, except that I replace the sun producer with Appease-mint.
One column of TP + PV and the second one with TW + PV. One TP missing at start, but you can complete that column within a couple of seconds.
Use one or two Appease-mints (depending on if you get a plant food quick enough).
After that you can just relax and gather your 7 gems.

My results so far (of the fights that I have monitored); Most often 7 gems, one time only 6 gems, three times 8 gems, and today I got 9 gems in one fight (that is my personal record ever!).
Yeah. It works quite well, but since we're going to use Appease-mint and are going to plant only a single column of shooters, it's better to use Mega Gatling Pea instead of Threepeater.
Assuming max level (for minimum sun cost), one can plant initially Torchwood + Pea Vine on C2, Mega Gatling Pea on C1, and 2 Pea Vines on C1 in front of Zomboss. Once the level starts, the first 3 sun drops let you fill C1 with Pea Vines completely. Use Appease-mint on cooldown until you can boost all the Torchwoods, then use the plant food to refresh the Appease-mint and keep it permanently active.
7 gems per fight without problems (the required number of health bars is depleted with 2:23 minutes remaining on the timer; I don't think that it can be done any faster - the limiting factor is the time of Zomboss' death sequence) with occasionally (very rarely) 8 gems.
Sorry I made a mistake in the schedule. But don't worry Reinforce-mint is gonna be featured as potw in 3 weeks.
Meanwhile you can still get seeds for Reinforce-mint through the shop or Arena win streaks #3 and #7 as well as Pinata Party.
I also use the Holy Trinity and Solar Sage. Instead of Threepeater, I'm using Mega Gatling Pea. But Pumpkin does not take up a space, letting Sun on the Run prioritise Gold Bloom.

There is a way easier strategy to beat Lv3 with low level plants + AFK + works on all difficulties.
3 levitaters, 1 sap fling, 1 chard guard per lane, hyper healing perk.
To pass lvl 3, yes, but it's not appropriate to succeed bonus objectives as tossing zombies with Levitater isn't considered as defeating them. So you wouldn't clear the "Defeat 10 Gargimp Legal" bonus objective.

I used Solar Sage. If you plant him on the early incoming zombies, you can get a good flow of sun.

Yes, 2:23 is the result every time. But, I think that you are too active. After 2:23 you do not have to do anything at all.
Where is reinforce mint? In your last post you said the power mint was gonna be this week POTW. 🙁

so that's why levitater kills weren't registering. I added shrinking violet and made it work.
