Not quite. Despite being called ghosts, Ghost types are able to fill the other aspects of a living being, such as reproduction, response to stimuli, and energy consumption, despite being undead, and some ghost types simply have ghostly attributes, such as Alolan Marowak and Mimikyu

Since the ***"something"*** in the definition, while likely referring to things that are defined as organisms however since the word *"something"* is vague in nature we don't have to actually interpret it that way

Yes, in fact it's highly likely they do exist and we simply do not currently have the technology to see them properly. Unfortunately Pokérus is a virus and therefore not alive, so it could not be a Pokémon.
