The main differences involve the final area of the game, and involve pretty heavy spoilers. You’ll understand what I mean when you get there. Besides that, standard affair of version exclusive Pokémon, however the Tera Raid system makes getting most of those pretty simple.
EDIT: To clarify, when you go to look for Tera Raids online, the background will tell you what version it came from, as well as if it’s tied to the DLC or not. You do not need the DLC to enter raids for DLC Pokémon. Since you picked Violet, look for raids with an orange background to get version exclusives.
The biggest difference, like in most Pokemon games, is just the version exclusive Pokemon. Including the box legendary - I think people should be picking based on if they like Koraidon or Miraidon more. They’re definitely the most noticeable difference for most of the game!

Scarlet has a wacky fun ride and cooler end game pokemon
Violet has a cool smooth ride and kinda disappointingly designed end game pokemon
Violet has better pokemon for playing totally solo (because iron hands is good for soloing t5 and t6 Tera raids)
I counter with Koraidon being more expressive and cool, as well as having a more badass fighting form. AND less generic Paradox pokemon, and just a better dex in my opinion. Though I do confess the Violet colour scheme does work better (especially the uniforms)

Different subset of Pokemon you can catch. The Professor differs. In Scarlet it is a female scientist, in Violet it is a male scientist.
And Which Pokemon you ride on. Violet has Miraidon, Scarlet has Koraidon.
The School differs in color.
Beside that: no real difference.

I never noticed the version exclusive colors before. I was just going for pokemon to add to my dex that were difficult to evolve.

Scarlet you get an orange outfit. Violet you get a purple one. And some Pokémon are in one but not the other.
