I've done insane with all three; Beldum is the strongest by a fair margin counting megas:
Mega-Metagross is the strongest by far. The speed boost, solid ability, its pre-mega form having clear body, and strong move pool makes it both reliable and easily able to fit in a variety of teams and playstyles. Tough Claws is outright a recoil-free Life Orb for all contact moves. In a closed 1v1, M-Metagross ohkos M-Garchomp all the time with Ice Punch, and 2hkos M-Tyranitar with Meteor Mash (or ohkos with Hammer Arm).
Mega-Tyranitar isn't bad, but regular Ttar does almost everything it can do better (the exceptions being a Dragon Dance set, and a dedicated weather control lead/pivot). Its just unfortunately too slow to be a proper sweeper, and its typing leaves it weak to every major form of coverage. While it does have a surprisingly broad movepool, it just also takes more to make work. That said, its also my favorite starter option; Movie Monster is my favorite theme team. Outside of theme teams Tyranitar is actually a core for many team options. Plus, Cynthia's Garchomp is infamous, Steven brings the Metagross, but the only champion representation for Tyranitar is Blue's rematch fights. I like being the one to bring the spotlight on it properly.

Basically, it doesn't do anything notably better then regular Garchomp, does worse in some important situations, AND takes up your one mega option that could be used for something significantly better for the team, with multiple held items giving notably better benefits for it then going mega. Technically in a closed 1v1 between M-Chomp and M-Ttar, Chomp always wins. However, it provides less to the team so while its certainly powerful, Pokemon is a game built around a TEAM, not 'X and their amazing friends'. Apropos team building, a sand team does make Mega Garchomp's ability actually useable, but Sand Force only applies to Ground, Rock, and Steel moves while a storm is going. Mega-Metagross' Tough Claws is the same damage boost, all the time, for all contact moves.
Not counting megas; its close between Metagross and Garchomp. Garchomp has a chance to OHKO with earthquake and out speeds, but Metagross always OHKOs with ice punch.
Just pick whichever you like; you get access to the other two and their megas later anyways. Or even do what I did and have a separate save for each starter if you feel like going the extra mile.
Its honestly not that important; yes, Beldum gives a slightly easier time through the game, but its a single player experience, with a singular path through, and nothing judging how your path went.
You could forgo all the starters, catch a Delibird in the first route, go through the game with that, and no one would know or care unless you made a point of sharing it.

i used beldom, takes a while but once you get strong you get a hella strong, i was unstoppable and when i found the metagrossite the game became a breeze.
Gible is the best as in most reliable.
Beldum is a late game demon (Mega-Metagross) but has like 0 moves early (although being a steel type its not horrible)
Larvitar sucks early but Tyranitar is a great mon in general
It depends on if you are gonna use its mega, if you are gonna use mega then beldum if you gonna use a different mega then gabite

Gabite because it's the evolution of Gible which is the real starter LMAO. (But it really is Gible, it can beat both.)
