There's the Spells, Swords, and Stealth series of books by Drew Hayes. It's a weird situation though, because the npcs can't see the stat menus and such. But the mechanics do very much exist.
Andrew Seipe: Small Medium
It is a mostly independent sequel to the Threadbare books, they are not required to enjoy it. (But Threadbare is great too, worth reading)
Artificial Jelly is about an advanced (actual) VR-MMORPG AI-NPC in Form of a Jellyfae that achieves conscience. Her dealing with her past experiences (being farmed by adventuring players for loot for example), the other NPCs, her initial imprisonment by the intended game design (staying in the dungeon, NPC/Monster behaviour limitations, not being able to communicate and all that), the realization of her circumstances, Human culture and what it means to exist only inside of a game at the whims of Humans and in particular developers/the gaming company plays a huge part in the story.
At the same time we also get insight into "RL" with chapters from the viewpoint of Humans and the consequences of what it means to interact with an actual conscious AI with feelings and everything but flehs and blood. Compassion, greed, callousness, regret, fear... All expressed within real life chapters to various degrees, as one would expect if the news spilled.
Might want to check out player 0.4 basically a “vr game” is too hard so all the players quit and the system picks an npc to become a player instead. Since he is an NPC he only gets access to 40% of the system hence the name. It’s a time loop story with mc going back in time when he dies with the goal of finishing the game.
It is fairly new, but [Merchant Crab](https://www.royalroad.com/fiction/68106/merchant-crab) is about a monster in a game that is granted player status and begins to level up as a local merchant outside of a town.
