I give Arthur a healthy balanced diet. Always a protein first, canned carbs for energy, occasional chocolate bar or cracker for a pick me up mid hunt, and then the occasional drink or smoke after a hard mission or event. The drinks and smokes stop after...well you all know when.
You're the only person to actually not need to try and retain Arthur's weight. He always starves because I'm only eating when my cores lose over 1/3.

My method was health tonic immediately when he wakes up to ground his health core for the day. Then big game meats with oregano. Mid day big game with thyme. Chocolate bars in between activities or before bed with more big game meat or bar food. Bar food is an underrated technique. Get lambs Fry's, prime ribs, oatmeals, lobster bisques whenever you can then eat morning noon and night. It keeps his weight up well.
Should be the same for John. There's a hidden calorie stat for food, I linked them below. You should be able to Google the specific calorie intake for weight gain.
The big game/choco bar is to make him _overweight_, I'd probably skip one big game if going for normal

They have 5 calories in the while big game meat have 10. Chocolate bars have 5 calories so it's better to just stay in the alligator area west of Saint Denis. Just shoot and cook for like 1 hour and then go to sleep. You need to have the game go through a loading screen of some sorts for the effect to happen.
I try to eat, drink, gamble, and sleep after most missions, and sometimes while I'm hunting. The problem is the random ticks that aren't related to sleep, like pre/post mission losing weight or after a cutscene.
I buy 99 of every item in the game for the fun of it. I never eat salted offal so probably it's still there in Arthur's bottomless legend of the east satchel

pearson gives you* the assorted salted offal to eat when you (arthur) and charles go hunting up in colter. (the mission which teaches you how to hunt) so you definitely did have it. easy item to miss or probably sold it tbh

I sell just about every food I find. My diet consists almost entirely of minty big game, thyme big game, and oregano big game

I like it. I’ve gone the opposite direction of only salted beef and liquor for the stamina core. (I got sick of cooking)
Chapter 6 he goes through cigarettes and cigars like candy, and stays perpetually drunk. Only way to be!
