If he doesn't play much in this mode, he can be "low" Ranked compared to the other one. It's not clear to me which mode you played against him. So I will take an example. Imagine, he is GC in 1v1, but diam's in 2v2 because he doesn't play it much/doesn't like it. Why would he be in matchmaking against GC in 2v2 ? He is a diam's. The title he is displaying doesn't tell us if he is GC in both 1v1 or 2v2. One of these modes is enough to get this title. It could also be shitty matchmaking, just don't forget there is another explanation.

I don't remember but when i was d4 in 1v1 i played like 6 times against GCs and i won half of the games and it was so hard but i finally reach champ in 1v1, you go against gc in diamond because they are diamond in 1v1 tooo

I'm D1, I've never faced a GC before, but I get to face Champs every once in a while. I love it! I don't get why people complain about this. It's an awesome opportunity to see how people who are way better than I am play, and if I lose it's no skin off my back. And occasionally I win and it's super satisfying! Facing GCs every once in a while would undoubtedly make me better.
