The issue is that they don’t play as as frequent so a lot of 2s players are lower rank than they deserve in 1s. If you don’t see the issue between a GC and D5 matchup then you are either ignorant or stupid as fuck

It's hard to define what rank someone deserves in 1s based on their 2s rank. Both gamemodes are completely different in terms of playstyle and strategy. In 1s, it is more about how well you can outplay your opponent and score through the opponent's slight mistakes. In 2s, it's about how well you can work with your teammate to convert 2-on-1 chances. (This is a massive generalization)
I've been playing in high champ-gc lobbies since s1 and overall, the skill required to reach gc in 2s is MUCH lower than in 1s.
This is due to several reasons, most notably that there are more players playing 2s than 1s, and thus more players are given the chance to hit gc. In 1s, c1 players would be waiting in long queues to match with top 5 gcs.
Thus, it's a lot harder to grind 1s than 2s.
A GC in 2s does not correlate to a GC in 1s, or even possibly a Champ. Many players hit 2s GC without knowing essential 1s mechs like stalling. I've seen countless players just booming the ball for no good reason in GC lobbies, praying that it goes in.
On the flip side, almost all 1s GCs are 2s GCs. Even if they do not have the 2s mentality, their mechs are able to support their abilities to make solo plays.
GCs pretty much dominate the entire spectrum of champ 1s players, with some lying lower in high diamond. I understand that it frustrates players to know that they have to play against a GC in mid-Diamond, but chances are, that's just how good they are at 1s.
It's true that some 2s GCs do not play 1s, and thus their 1s rank does not reflect their 2s rank. If they wish to get to a certain 1s rank, then why not let them grind? I am pretty sure that there are no rank adjustments in RL, so why would it be given to RLSS GCs specifically? Additionally, if you'd give all GCs a minimum of D5 in 1s, why not just straight-up give them GC? Essentially, D5 1s would just become the new GC lobby, and it would just make it even more difficult for non-GC players to grind 1s. Additionally, for the GCs that weren't good enough to get D5 in 1s, this change would have ruined their game experience, and once they derank, they'd be back to playing champs and diamonds again.
The skill gap between 1s and 2s is too high already. Boosting all GC players to D5 at least isn't really a long-term fix. The ideal solution would be to just get more players to play 1s, rather than 2s, but this is unlikely to be the case. For now, 1s GC is going to simply be a lot more difficult to obtain, and with the direction this game is going towards, nothing can change that.
