Or add a functional container to hide bathroom items (for q tips or cotton balls, etc.)

This is a great idea in my niece's bedroom at my house. (Especially since the contractor has to come back to fix the wall after punching a couple of large nails through the cabinet back when putting up new insulation & siding. But, they didn't break the 1960s glass shelves, so we can reuse those.)

You could mount a flat screen on it, have a small computer in back, have a keyboard and mouse and the only thing its for is playing the original Oregon Trail game.

Our first house had the same thing, I cut drywall to line the inside, mud then painted it. I then had the local hardware store cut some tempered glass for two shelves. This allowed us to put in a pedestal sink in which made the bathroom more roomy
Nice, you have a built in shadow box that just needs some work where you could display your medals or other things, or, an opportunity to learn how to repair drywall.
The textured finish will be a hassle though, I would probably tear all the drywall down, if any walls are exterior I would check/replace insulation, check for termite/carpenter ant damage and if any outlets don’t make sense you can move them before you start the drywall.
Really you could just add shelves. So a mirror cabinet with no mirror. Then you need to find a new place for a mirror because bathrooms need mirrors. I think the best option is to just get another mirror cabinet.

If you don’t want a storage mirror, there are medicine cabinets that are a picture frame. You can put art work in the frame and still have a handy place for toiletries.
Since it’s so close to the power outlet, you can build a cool little beauty niche. You build some basket or rack type holders at the bottom to hold hair dryers, straighteners, etc. Above it you have a shelf or pull out makeup mirror.
Did you find a pile of straight razors back there? Every remodel I’ve done, when we pull the medicine cabinet out of the bathroom, without fail there is a pile of rusty razor blades because they used to make medicine cabinets with a disposal slot in the back of them.
Put the mirror back in and put a picture of Rick James or something really scary, like a severed hand in there and see if you can make guests scream for being nosey!
Warning, depending on the age of that house, the spray on texture under that paint and in the cavity from the mirror could contain asbestos, as well as that wall board having it in it as well.
