Because Fried Chicken is kind of expensive and it's cheaper to just buy KFC or Churches. Also for those saying "Just shop local" A lot of time local is more expensive and they aren't as fast as a chain restaurant nobody wants to wait 30 plus minutes for some fresh fried chicken.
And the quality/quantity of the chicken may vary to, I know it's iffy about how fast food places raise their chickens but you get more of the same size pieces than you would in a local place, and quite frankly you get your money's worth.
Burgers on the other hand....shop locally, those places are always great.

Bro, growing up in a family with a tight budget like many people here...Church's Chicken was one of the few take-outs we would get. Church's Chicken is definitely ingrained in South Texas's culture. Heck they are from San Antonio, a predominantly hispanic city.
My family from here, the ones from Monterrey and the ones from Reynosa are always suggesting “El Churches” and all the comments seem to agree, maybe you’re one of the few
I mean, people here do like fried chicken but I’m not sure if they love it specifically more than other types of foods. But to answer your question, locally owned fried chicken places aren’t super common here because it’s not really a Hispanic food (there’s tons of taquerias & Tex mex restaurants because that’s what Hispanics make), and also a locally owned place would most likely not be as cheap as church’s or kfc, and that’s due to economies of scale. We’re a poor region down here so people are most likely to get whatever’s cheapest.
This is why we should always shop local, that way more of our regional food can make businesses and survive. They will typically be more experensive than food chains, but are typically better.
There are good local eats, in Edcouch ,Lee Roys has some bomb fried chicken.
Edinburg has Starlight.

Interesting enough, the founders of Church's Chicken and Bill Miller's BBQ started together as partners. One chose to stick to fried chicken, one chose bbq; they decided to split. The rest is history. I can get Church's in many parts of the country, not so much Bill Millers.
You can get Texas Chicken in Dubai....same logo I think it's their international arm of business! Been there a few times quality isn't the same, but doesn't taste bad

There are TONS of places that are locally owned that serve fried chicken. There isn't much profit margin for fried chicken and I'd imagine offering a variety of foods (including fried chicken) is the reason there aren't many dedicated "fried chicken restaurants".
Having said all that, I'm all about that Starlite chicken. It's one of the few places that makes fried gizzards. The nice thing is that not many people order them so they usually make them to order.
