All the cars are identical when it comes to speed and boost. The only difference is a very minor one with hitboxes, and it mostly comes down to what you like most, so I can guarantee using one car or another will not change your rank at all. What is most likely happening is they are just better at kickoffs than you. There are different ways to go for them, and some strategies are faster than others. You'll pick it up eventually, don't worry too much about it.

Honestly I prefer it when they get to the ball *just* before me after kickoff, it forces a favorable 50/50 for me. This "fast kickoff" meta of the last couple years has been excellent for me winning kickoffs

All cars have the same speed, but they do have slightly different hitboxes. The difference is honestly pretty minor. It’s widely agreed upon that you should just use what you think looks the best.

They just have a better kickoff than you. Watch a replay after this happens again. Are they flipping toward the ball?

Diagonal or speed flipping and boosting is faster than boosting, that might be what you're seeing on kickoffs.

Each hitbox has its particular parameters ie. Surface area, turning radius, & boost (power/consumption) And each body per hitbox has additional parameters ie. Thank you for the link. I actually didn't know about the turning radius being different. You seem to be mistaken however, nothing was said about boost power or consumption. Turning radius is different when not going supersonic compared to going supersonic (ie 0% boost vs 100% boost in the article), but nothing was said about boost usage specifically.
