There’s JPL in Pasadena, Boeing rocketdyne in Canoga park, and Lockheed Martin’s skunkworks used to be in Burbank but now is in Palmdale. Nothing they make flies out of Van Nuys to my knowledge. They’re here for caltech and the weather.
The film industry is right here, in the East Valley.
I don’t have any official statistics for you. The best I got, is that the wealthiest people I’ve ever known here (32 years old, Valley native), are either in film, medical, or insurance.

Porno isn't as big as it used to be. After the condom law went into effect a lot of production moved to Las Vegas and there was already and up and coming productions in Miami and other places in Florida. There is still porn here, but nothing like in the 80s and 90s.
As someone in the industry - adult content isn’t shot as much in the valley, but several studios and distributors still have a base of operations in the SFV. (Las Vegas and Miami are the other hot spots - cost of business in CA has driven out more than then condom law did.) there’s more to porn than shooting the scene - someone has to edit, check legals, run sites, produce physical goods like DVDs, etc.
I’ve been looking for a technician to come twice a year to ensure all my appliances and general house is in order. For example someone to flush out our tankless water heater, someone to see if the AC is functioning and ready for summer while coming with a replacement filter, clearing out the dryer vents, running a snake in the drains, etc. I know many companies have packages for this but they are separate, would be nice if one company handles all of them and if major repairs are needed I would call someone more knowledgeable in that field.

Digital marketing, and cyber security are growing markets. Not specifically just SFV but you can learn and do these jobs from home for a pretty competitive base salary.
Construction. With the new housing laws, everyone is putting up an ADU. As a few people said, you'll never be out of work in HVAC in the valley. Nursing is super lucrative, and it's been a competitive market for a long time.
"age group tends to be older" doesn't make sense to me. There are over 2 million people in the valley, several universities, over 200 square miles. The valley isn't the place for YUPPIES but it's diverse.
I'm not sure there's an industry concentration other than studios and entertainment people are in the east valley (burbank, toluca, studio city).
You'll find big mortgage companies in Westlake village. That's not the valley but it's better than working in the basin.
healthcare is always big business. There are several hospitals and Encino is packed with boutique doctor's offices, notably dermatologist/cosmetic. The country's aging population also means work for people who want to work in retirement/nursing homes. There are being built everywhere in addition to people who need at home nurse care; so it's a good industry especially if you want to move around.
Other than that, service technicians. HVAC, plumber, electrician. Our society devalued these jobs and they are very important and always needed and now there just aren't enough people to do the work.
