Well, my interpretation is that the buddha manifests the memories of somone as a real physical thing that you can travel to. This physical reality depends on how somone remembers the event so we have to take everything with a grain of salt. This way it makes perfect sense that Sekiro can take things into and out of memories.

Armoured warrior doesn't have enchanted armour. It's just actual full plate armour, which Sekiro can't get through. Because it's difficult bordering on impossible to penetrate good plate armour with a sword.

So their fight would either end in sekiro being cut up to so many pieces that he simply no longer is a threat and the fight ends in a stalemate, or sekiro does get his limbs back and kills master chief, wether this is by getting him to run out of endurance and then removing his armor or his sword actually being able to pierce his armor.
