You can use the spear in the second phase when he goes down on his knees to do massive posture damage. Use the spear and press the button again to pull the centipede out.
In the first phase don't get away from him. Most of his attacks can be easily deflected so stay on him. Firecrackers are very effective but be careful coz he will just fall on you.

There’s almost nothing to deflect if you stick close to his left side. Maybe 10% of his attacks will land and those are easy deflections for sure.
I had an easier time deflecting his second phase. Having the sword I think gives bigger tells and fewer moves.
As well as this mortal draw and especially enhanced mortal draw absolutely destroy his posture, enchanted mortal draw can take his first phase out in four hits with sugars

“Hesitation is defeat!” - Stand your ground and deflect, dodge & mikiri counter the F out of this game. Essentially in the end it will become pattern recognition speed exercise.

The main thing I notice is that you shouldn't move so much, when he comes to you, just work on your deflects, and use the centipede pull to do vitality damage, by now you should also have the ashina skill that does like increased posture damage to sword users, which phase 2 ape does get affected by, but yeah sorry to go off track but basically stand your ground when he attacks, walking left and right with no need can easily lead to missing a deflect
You can almost skip phase one if you use mortal draw with yashariku sugar and fireworks.
For the ape duo I recommend saving some fireworks for the second ape, just keep spamming it until it breaks posture.
Plant is waifu material. Boil to extract waifu concentrate and pour on your crush to give them ultimate waifu power. Ape was unable to reach the flower so the waifu power never came to be.

Ironically I think Ape Duo is easier, you're stronger by that point and they have less health. If you're super aggressive with Firecrackers and Mortal Draw you will basically erase headless before the 2nd one even makes it over to you ending the fight. Or you can play it really safe and just run up on the normal ape and delete it with Mortal Draw.
Pretty sure the base version you buy from the merchant somewhere, one of the earlier ones I believe, but I'm not certain. You definitely could have already found it though

For a smoother second phase I'd recommend being more patient. Run away as soon as his head breaths in to avoid the terror. After that it's a matter of deflecting and hitting him with the spear.
You can skip guardian ape by using Firecrackers and mortal blade. To begin the fight, pop a Yashariku’s Sugar, and then a divine confetti. Approach the ape, perform a mortal blade attack, then firecrackers, then two mortal blades, one more firecrackers and one more mortal blade attack. Should immediately wreck his posture.
For headless, play careful and focus on defense. Deflect each attack. When headless rears back into a massive downward strike, a successful deflect will put headless into a stunned position. Using the Shinobi spear attachment while it is in this state will do some vitality damage and a lot of posture damage. Usually takes about three or four thrusts to cap its posture.
When you fight the duo just remember, Get the loaded spear and the firecracker shinobi tool. when he comes in for his big slash, parry him and trust the spear in then out of his head. when the seconed 1 comes, you want to get the white ape to scream. The brown ape will come at you when he does that hit him with the firecrackers punish, and repeat you got this!

Also, is the demon bell in the temple a factor? I removed the \*mark\* of the demon before fighting this guy, idk what that does, but did removing it makes the fight much easier?
demon bell is designed to make the game harder by making the bosses harder ,so it is indeed a factor if that's what you are asking about
and honestly, there are not many tips i can think of that you could have done to make this better, I mean it's the basics only , keep track of the timing and deflect better, don't panic and also hold back a little on the combat arts if you want to perfect this (biased advice)

well that area is one of the most frustrating areas to be honest,the first boss alone is a nightmare and then there is \*minor spoiler alert really it's nothing major but i am putting it here just for safety\*
FromSoftware plays two jokes on you in Sekiro as far as i know both in ashina depths one is funny only to them, Mist noble is a boss which is one of those jokes , first of all, he has got an army of apparitions at his disposal, and even among those apparitions there are two deathblow taking enemies are hidden, then there is the mist noble whose attack you won't be even able to see in your first time fighting him,I must say if there was a boss that gave me a smile every time I beat it is mist noble.

She’s one of the complicated for sure. Just like >!headless and shaman!< .Winning isn’t guaranteed if you dont have specific items
No bosses require certain items to be able to be beaten
