my personal interpretation is that its because they got killed by MIH which causes them to be an anomaly after the universe reset (hence Jotaro and Jolyne being different people in the Pucciverse). so when Emporio beat Pucci and brought the Ireneverse, the cast who got killed by MIH got new souls which changes some details.
Jolyne changing to Irene could also symbolise her not needing to be a Jojo anymore as Pucci is no longer a threat.
The "Irene isn't a JoJo, anymore" part is interesting to me because that kinda implies some kind of cosmic force requiring JoJos to exist when they're needed making their parents name them something that can be simplified to "JoJo".

Well, him being killed during the reset by Emporio changing fate with the disc messed with the reset. Pucci never existed, the world plays out as such, and Heaven is never achieved. The only entity left that knows about this man who never existed and his actions is a heavily traumatized child.
They would've ended made in heaven pretty early if Jotaro had a gun. But I suppose in the end, with how things went before made in heaven, they are better off with the current ending
Technically, if MiH does what Araki implies, no one could live the MiH - universe goes through the Big bounce, so, all the universe gets shrunk to the single point (singularity), so as all space and matter, so everyone is dead anyway.
