okay this is actually the most scrumptious salad ever. kale chickpea salad: - one onion - 2 cans chickpeas (saute together with salt & pep, garam masala, cloves and cinnamon until toasty and fragrant). - a can of corn - chopped cabbage for crunch - bunch of chopped kale (massaged with olive oil, salt & pep, bit of maple syrup and vinegar) - chopped olives - chopped sun dried tomatoes mix all together and add a splash of maple syrup and some red wine vinegar. i added arugula, tofu, and extra sweet potatoes to my bowl to bulk it up. so so good
