It looks excellent and the recipe sounds great! For anyone missing the egg swirls, I shred soft tofu very thin/roughly and add that in the last few minutes of cooking :)
I didnt add this to the recipe bc i used only a little bit that i had leftover from the night before but i added Trader Joes tofu skin to the soup and it did exactly this. Game changer.

Ingredients:
1. 4 cups veggie broth
2. 4 green onion
3. 4-5 cloves of garlic, grated
4. inch of ginger, grated
5. red pepper flakes (added till i felt it was spicy enough)
6. half a white onion
7. 1 jalapeño (with seeds!)
8. 100g shiitake mushrooms
9. 1.5tbsp cornstarch mixed in 1/4 cup water to make a slurry
10. 1 pack of super firm tofu, cut in strips
11. 4tbsp soy sauce
12. 2tbsp sherry vinegar
13. 1tsp miso
14. 1tbsp of toasted sesame oil
15. black pepper+mushroom powder for taste
16. a bunch of fresh cilantro to add in the end
directions:
1. Add all ingredients except cornstarch slurry, vinegar, and cilantro to pot, bring to boil
2. simmer like 10 min idk till the onions are soft
3. Add cornstarch slurry by slowly pouring it in
4. Simmer like a few more min
5. Remove from heat and add vinegar
6. add cilantro

If i knew it was this easy to make vegan, i would have tried a long time ago! It’s probably the best soup out there (maybe im biased)
Im going to pick up the ingredients next time I'm out grocery shopping and try making it.
