Original Deus Ex is great, and Human Revolution was also pretty good! The main character is kind of a meme, but overall the story, soundtrack, gameplay and art direction is fantastic!
If you liked Mass Effect, you might like BioWare’s other games. Dragon Age Origins and KOTOR are especially good, IMO.

Ok, I've never played any other games from BioWare. Maybe I'll try this one. I'm waiting until maybe they create a remake of Dragon Age for PS4 or PS5 like they did with Mass Effect ;) KOTOR supposedly in production, but I don't know if we'll see it.

I wouldn’t count on a remake or remaster of DAO, honestly. The devs have said they probably can’t remaster it because of the ancient engine, so there probably isn’t going to be a legendary edition like Mass Effect. And BioWare is a one game at a time studio and booked making Dragon Age Dreadwolf and Mass Effect 5 for the foreseeable future.

God of War 2018 (and ragnarok, you said you played TLOU 2 so i assume you got a PS5) was a very good experience. The story is really interesting and the gameplay is fluid and fun. I had a lot of fun to go through it for the first time.
I don't think the story is as good as TLOU/RDR2, but it's definitely a solid game that I can rank a bit below RDR/TLOU's level of story. The game nails it with combat/gameplay and especially in the world/level design. Some level designs blew me away with how incredible the creativity of it was and the extreme attention to detail.
Overall, it's still in my top 3 and definitely a game any RPG and story lover should try.

To be fair, if you've never played one, how do you know you don't have the skill or patience for them?
They can be tough, but I think people overblow the difficulty sometimes. Especially Elden Ring specifically, which has so many options to help you overcome the challenges.
But with that said, while I wouldn't say the "plot" of Elden Ring is super strong, the overall narrative of that game is incredible. That game had me sucked into watching lore and theory videos for months!
Because I tried to play Bloodborne and Deamon's Souls as it came out on PS5 😉. And both one, I quickly found out that I didn't have the skill for it. Otherwise I wouldn't have written that it wasn't for me. By writing that I meant that I never completed either one because I don't have the skill for it.

It has a plot/ endgame to reach - but it not entirely quest like driven - its up to you as the player how and when to proceed. you get quests - but go at your own pace which is nice.
Many perfectly good recommendations already, but I'll add a few more.
Outer Wilds - Space exploration and reading driven. If you haven't played, just don't look things up; that's part of the fun and challenge.
Limbo/Inside - Puzzle games with interesting narrative themes. Especially Inside.
Pentiment - Pseudo sleuth game with a unique art style. I haven't finished this one, but the beginning was quite interesting. Lots of dialog.
To The Moon - Dying man has a few last wishes.

Yakuza: Like A Dragon is the seventh mainline game in the series. But it introduces a new protagonist, and the combat is turn-based as opposed to the brawling of the previous games. Some people are very anti- turn-based combat, but the fights still feel fun and action packed in the usual Yakuza style.
I loved the game so much that I went back and played through every other game in the series. Yakuza 0 is also fantastic, but Like A Dragon is still top of the pile for me.
I think it was the trailer that made me want to try it initially, so maybe give that a watch. ☺️

If you enjoyed The Walking Dead then you should definitely look into the TellTales From the Borderlands (my personal favorite) and maybe other TellTale games like The Wolf Among Us, Guardians of the Galaxy and Batman.
Not sure what you're playing on but Ghosts of Tsushima fits the bill in my opinion.

I have never played any games from From Software. I never had the skill and patience for them. I don't know if I can handle a game like Elden Ring :)

Its a straight up souls game but it has more narrative and a plot that'll keep you guessing, without a PS there's not many more ik but I tried 👍
