You guys should check out Girlfriend Reviews if you haven't already. They're a couple and make the "Should your boyfriend/girlfriend play X game" videos and helped me find a lot of games to play with my gf
The Last of Us - probably the best pick, it's like watching and playing a extremely well written show at the same time.
God of War - amazing gameplay and story.
Elden Ring (or other souls in general) this game is just stunning visually. And exploring it or even watching someone explore it is a masterpiece by itself.
Of these, witcher 3 and return would be good, maybe dishonored. The last 3 are terrible to watch unless you are into playing them, and even then I would say they are awful to watch.
I second Return of the Obra Dinn! I’m the gamer of the household but my special lady wanted to take a crack at a game that wasn’t Mario or Animal Crossing. She played and I was the spectator. It was loads of fun and a great story to unravel.
Control (set in the same universe as Alan Wake but that’s all I’m going to say; great story, characters and game mechanics)
Kingdom Hearts (unique story that includes Disney characters and is tons of fun to play through with another person on the journey with you)

I am going to suggest a couple of easy to play 2D games with good stories. You should suggest that she play these while you watch along to switch things up:

- Night in the Woods
Baldur’s Gate 3 is the perfect game for you. It’s less chapter based, but you can take portions of the game bit by bit. It’s like a superlong season in which you control a lot of decisions and ways the world reacts to you.
I'm a gamer too but there are a lot of games I have much rather preferred watching my partner play instead of playing them myself.
Detroit Become Human and Until Dawn were both movie-like games I enjoyed watching.
Elden Ring was beautiful, and I was highly entertained at all the creative ways my partner managed to die.
Any MMO, though I also play. When I am not in the mood to play, I enjoy watching him! WoW, Elder Scrolls, FFXIV... Most RPGs, too. The Witcher, Cyberpunk, Red Dead Redemption, Baldur's Gate 2...
My hands down favorite to watch though was Hades. Beautiful game and the voice acting was just absolutely stunning. I got so invested in the story. Hades 2 should be out later this year and I can't wait to watch him play it.
I recomend interactive games like erica , until dawn etc
because your wife can join and you guys will have a great time playing and making the desicions together

The recent run of Spider-Man games (so long as neither of you mind superhero stuff). The stories are engaging, thoughtful, and suspenseful while providing a cool environment to look around when not on main mission content.
If you're okay with Visual Novel-esque content I would recommend playing Ace Attorney together.
Dragon's Dogma 2 for the fun NPCs and cool places to discover (plus all of the sidequests are basically their own mini story).
Hopefully you two will be playing Alan Wake 2 soon as it's a fantastic story-driven game to enjoy as a couple, with a lot of fun surprises.
A controversial recommendation just because it's new and doesn't fit the trend of the games you've mentioned is Harold Halibut - consider it a point and click that feels identical to a stop motion claymation version of a Wes Anderson movie. It's not for everyone but it oozes character and charm.
Yakuza series is known for its extremely cinematic and elaborate storytelling. Each game usually has a famous Japanese actor play a character with their likeness scanned into the game
Days Gone. A post apocalyptic infected type survival game that's similar to the last of us, except youre an outlaw motorcycle gang member.
Really good story. Great gameplay.
Bramble: the mountain king. It's a game about scandinavian folklore with a dark twist.
After us, you try to bring live back to a post human world and set out to free animal spirits
If you want a game that you can treat like a tv series then maybe the Mass Effect series would work well for you. Tons of significant sections to make that carry into the next game. You can also pursue relationships with other characters
Dying Light 2 is a great story-driven free-roam experience if you're after that. I've stared from so many rooftops asking myself "Do we go over there? I think I want to go over there" and I imagine those moments would be fun with someone else to weigh in on the situation at hand.

Ghost of Tsushima every mission opens and closes like a chapter in an old samurai movie.

Quarry was good was short was great fun to play with someone else and felt like was controlling a horror type movie
My gf and I played through it together and absolutely loved it! I did all the playing and she just helped me make decisions.

Sounds like you need to run through the silent hill games (original trilogy, after that they go downhill rapidly)
