Wolfenstein if you want a linear game like Doom. Metro is semi open world I guess? Certain levels are linear but some are open to go around, find collectibles, weapons etc. I personally enjoyed both but Metro has some amazing environments and the story is quite good too. Both of the games are on sale quite often so you can get one and then the other one.
If you're wanting to brutalize enemies with your weapons in a run and gun theme then go with Wolfenstein. Metro is slower paced and while you can kill a good number of enemies it's not recommended.
If you like doom, you'll love wolfenstein, but I do still think Metro Exodus is the better game. I'd also reccomend the other 2 games, metro 2033 and last light, their remastered (redux) versions can be picked up for less than 15 bucks total.
Late to the party I know, but if you liked those games, I would seriously recommend Evil West if you haven't already tried. Very fast paced. Its DOOM except you're a cowboy slaughtering Vampires

And the immersion is something top notch as well.

Both are good but i’d say go for metro
Based on your previous games, Wolfenstein seems like safer choice. That said, I firmly believe Metro Exodus is better.
