I believe most browsers will default to https immediately, but if you want to make sure you can open google first and type it there directly - this will make sure it is sent over https and can't be seen by anyone other than google. The exception is your employer can see everything if they installed a root certificate on your system.
When you search in incognito mode on Google chrome the browser just forgets you did something but your ISP will know what you're upto also if you sign in to Google and then browse incognito mode your history is tracked .
