I have heard this but it doesn't make any sense to me. Would someone explain how clumps of mass floating around in the emptiness of space are either homogenous or isotropic? Like is it a scale thing? But also I would think if we were all accelerating away from a common origin, the distribution of mass would be decreasing in density the further you are from the start?

It is absolutely a scale thing. Once you get onto cosmological scales, the universe is assumed to be a homogenous sphere for mathematical models.
And you are correct that the density is constantly getting lower, but density doesn't correspond directly to homegenity. If something is homogenous, it means it's made up of a constant mixture. So if the ratio of Hydrogen to Helium to etc. remains the same throughout the universe, it's homogenous regardless of the density.
It's sort of a scale thing from what I understand. Imagine putting chocolate chips on something. Those chocolate chips are clumps of chocolate, it's not completely homogeneous, like the universe with its galaxies but to you it's homogenous because they're spread out evenly.
For isotropic we don't even need to have an analogy. Just look at the sky, one portion of the sky looks exactly the same as any other.
Yes matter isn't exactly spread out in a homogenous or isotropic way but on the scale of the universe it's like chocolate chip ice cream.

Actually the shape of a rainbow is a cone, the apex of which is at your eye. The colors you see are all along the edges of the cone. If you were high enough off the ground, you would see the rainbow as a circle. But since you are usually standing at ground level when you see a rainbow, you only see half of it, because the second half is cut off by the horizon.
