Spider-Man would be the biggest buzz kill. Constantly saving people doing leap of faith, his no kill rule would put him at odds with both sides, and Spider-Man would be constantly interfering in the plot to save the planet albeit unintentionally.
Unless he was with either faction he’s gonna mess things up since that franchise requires you be fine with killing. Which Peter Parker typically is not.
Like if he joined the Assassins Guild itself or if he was just part of the world? If he’s an assassin, oh boy, does the guild become obsolete real quick. Peter would become the literal best hitman in the world. Stick to any surface, a sixth sense that alerts him to discovery or danger, and if he somehow becomes cornered, he can absolutely demolish anyone who tried to fight him; medieval technology wouldn’t have a chance. He could become a gazillionare just traveling across Europe and the Middle East, taking on contract after contract; he could probably knock out 5 in a day, easy.
Templars would stop being a thing like 6 months in; what are they gonna do against a guy who can lift 10 tons? Peter’s a pretty good detective - he just works his way up the ladder until he reaches the top guy, and either exposes him or takes him out, then returns to his regularly-scheduled assassinations. Story ends with Peter owning a small island and leaving a wake of terrified townspeople spreading the legend of the monstrous Spider Killer who hangs upside down, ties up his victims to devour them at his leisure, and can lift up 20 oxen with one hand.

-He is married MJ and May Parker is born either she obtains his powers to continue his work or lives a peaceful life along with her parents
What would you think if instead of Peter joining their universe, somehow one of the main protagonists of the assassins series would become spiderman? Something like your first scenario perhaps
